- 500g carrots
- 4 tsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp low sugar maple syrup
- 1 tsp chili oil/sauce
- 3 cloves of garlic
- 1 tsp ginger

Instructions
- Using a peeler,peel carrots lengthwise into ribbons and place in a mixing bowl.
- In a separate bowl, combine sesame oil, soy sauce, rice vinegar, maple syrup, chili oil, garlic and ginger.
- Mix until well incorporated, then transfer the sauce to the bowl of carrots.
- Mix the sauce into the carrots until it is evenly distributed.
- Top with green onion and sesame seeds.
