Instructions

  1. Dice or chop red onion, dill pickles and cucumber into bite sized pieces.*
  2. Mix into a bowl with kidney beans.
  3. Add mayo, lemon juice and pickle juice, and mix until well incorporated.
  4. Split the salad mixture into your meal prep containers.
  5. Top each serving with 15g of feta cheese.

*I recommend a mandolin to save time! Yo don’t need a fancy one.
