Ingredients

- 10 dill pickles
- 70g red onion
- 400g cucumber
- 1 can white kidney beans
- 5 tbsp light mayo
- 75g feta cheese
- 1 tbsp lemon juice
- Optional:
- 1 tbsp pickle juice
- Any protein or other ingredients you want. I like adding chicken breast.

Instructions
- Dice or chop red onion, dill pickles and cucumber into bite sized pieces.*
- Mix into a bowl with kidney beans.
- Add mayo, lemon juice and pickle juice, and mix until well incorporated.
- Split the salad mixture into your meal prep containers.
- Top each serving with 15g of feta cheese.
*I recommend a mandolin to save time! Yo don’t need a fancy one.
