Ingredients

- 820g Extra Lean Ground Beef or 900g Ground Turkey*
- ~350g Beans (choose your fave!)
- 150g Cottage Cheese
- 200g Bell Peppers (that’s like, 2)
- 1/2 Pack of Burrito Seasoning or…
- 1tbsp Chili Powder
- 1tbsp Garlic Powder
- 1tbsp Black Pepper
- Optional:
- Cilantro (to taste)
- Romaine lettuce
- Toppings: cheese, guac, sour cream, tortilla chips, salsa etc.

*I use slightly more ground turkey only because it always comes in packs of 450g, whereas ground beef packages seem to vary 🤷🏻♀️
Instructions
- Cook ground meat in a hot pan on medium heat.
- Season ground meat with half a packet of burrito seasoning, or chili powder, pepper and garlic powder.
- When the meat has browned, add in cottage cheese. Mix until the cottage cheese has melted and formed a creamy texture.
- Equally divide meat mixture into your meal prep containers.
- In a pan on medium heat, add 1tsp of oil and sautee beans and bell pepper.
- Equally divide pepper and bean mixture into the meal prep containers.
- When ready to eat, heat in microwave for 1-2 minutes and serve over chopped lettuce, or rice.
- Dress with toppings of choice.
- I use salsa and plain greek yogurt as a sour cream substitute.
💡IDEA!
If you like refried beans, you can buy it canned. Alternatively, I’ve just sauteed beans with garlic powder, pepper and finely diced onions, then used a spoon to mash them up to my desired chunky/smoothness.
